Oh, the sublime deliciousness of Soupe à l'oignon (French Onion Soup). A giant bowl of brown broth with hints of garlic, cognac and wine. Swimming soft slivered caramelized onions covered in a gooey Gruyère shell. Enjoyed with a goblet of Leffe Brune. Quite a way to work the grey day away from my virtual Parisian office at Cafe Mucha.
